I’M not one to go overboard in describing the myriad aromas and flavors in a glass of wine. In fact, most of the gaudy descriptions found in tasting notes will not help a whit to understand the character of a bottle of wine or to anticipate the experience of drinking it.

Wine enthusiasts can now collect, store and show off their star vintages thanks to a trend that's seeing homeowners opening their doors to wine cellars.
In fact, many are popping the cork on their budgets, spending as much as $60,000 on a small room that houses hundreds -and thousands -of their prized possessions.

2011 is shaping up as the most difficult vintage since spaceships landed in Châteauneuf-du-Pape (or Château Piff du Paff as that wonderful story in the Weekend Financial Times called it) and squashed the vines back in 1954. Things got so bad, the town council passed a bylaw forbidding aliens from landing in the vineyards on pain of having their flying saucers impounded. Aliens are not a problem in Constantia since the “Tree Taliban” started clearing invader species from Tokai forest and the slopes of Table Mountain. Rather it is a question of price.

Most international winery types I meet are stunned by the progressive nature of wine consumers in British Columbia, especially when it comes to screwcaps. It seems we were early adopters and have embraced the closures with barely any resistance. You will be happy to know 10 years down the road others have followed.

Did you know that the shape of the wine glass you use – and the design of its lip - can profoundly impact your wine-drinking experience? Hard to believe, I know, but I became thoroughly convinced of this fact after attending a very interesting and educational event.

Stuck indoors during the Big Freeze, I have turned to traditional comfort food, churning out slow-cooked casseroles, chunky sausages with swede-and-spud mash, and bubbling cheesy pasta bakes. It's hardly Heston Blumenthal and a delicate oyster foam, admittedly, but it is the kind of food many of us rely on to warm the soul in deep mid-winter.

It may seem rather premature to talk about something that doesn't happen until May, but the Wine Summit Lake Louise at the Post Hotel sells out every year, long before the actual festival.
This year's summit will take place May 26 to 29 and will feature winemakers and owners of some of the world's finest wineries, including Chateau de Beaucastel, Domaine Weinbach, Masi Agricola and Harlan Estate. Impressive.

According to Hyun Koo, a microbiologist and lead researcher at the University of Rochester Medical Center in New York, compounds called polyphenols which are present in the red wine, block molecules in the mouth that normally break down sugar and attract bacteria to cling to and damage teeth surfaces. The bacteria also produce an acid that erode the tooth enamel, leading to cavities.

A bottle of beer has stood in the same corner of my fridge for three years. That surprises Joel Manning. Not only because that bottle is a 500-ml bottle of barley wine brewed in 2007 by Mill Street Brewery, where he serves as brewmaster. But also because that beer is still in the fridge.

What will you be drinking on New Year's Eve? Convention says sparkling wine, and I say why mess with tradition? As suggested earlier this year, under the new .05 drinking-and driving regulations most of us will be partying at home where there is no added markup to the price of wine. That means the world's best sparkling wine, Champagne, is essentially half the price it would be if you ordered it in a restaurant or hotel. So why not make this New Year's a Champagne affair?
